What Is Buckwheat?
Despite its name, buckwheat is not related to wheat. It is a grain-like seed and is naturally gluten-free. It’s what’s known as a pseudocereal which is what quinoa and amaranth are. Even though it's a seed, it can be used like a grain and has an earthy and nutty taste.

Instructions
1. This is an incredibly easy recipe. First, rinse the cup of buckwheat in cold water using a mesh strainer. This is just to remove any dust or debris.
2. Next, add it to the Instant Pot with the 1 ½ cups of water and ¼ tsp. salt and stir.
3. Set the Instant Pot to high pressure and cook for 5 minutes. Once it beeps, turn the pot off and allow time for natural pressure release for 10 minutes and then quick release.
4. Fluff with a fork and serve.
Expert Tips
- If the buckwheat is a little too wet when you open the lid, just give it a couple minutes to finish absorbing all the moisture.
- If you want to cook more buckwheat, use the ratio of 1 part buckwheat to 1 ½ parts water. The cooking time remains the same.
Storage Tips
Once cooled, store buckwheat in an airtight container in the fridge. Use within 3-5 days. Simply reheat in the microwave.
Serving Suggestions
Since it has a mild taste, buckwheat is delicious paired with a more flavorful dish. Use it like rice and top it with Mexican-flavored pinto beans or spicy collard greens.
