Zesty vegan jambalaya is easier to make in the Instant Pot. It's full of veggies, rice, vegan sausage and lots of flavor. If you’re looking for a hearty meal with plenty of spice, this recipe is for you.
This vegan jambalaya has some serious flavor. It can also be spicy depending on the type of vegan sausage you use. If you want all the spice, use vegan chorizo. (I use Soyrizo.)
The Instant Pot makes cooking this dish quick and easy! It makes a great weeknight dinner and I love having leftovers for lunch.

Ingredient Notes
- Vegan sausage: Use your favorite plant-based sausage. If you can find vegan andouille sausage, that’s a great choice as you can cut it into slices. If you like spicy sausage, choose a vegan chorizo which will cook up like ground meat. If you want a milder option, choose regular vegan sausage.
- Vegetable broth: Use homemade vegetable broth or packaged.
- Bell peppers: Use any color you like although I always use at least one green bell pepper. For a sweeter pepper, use a red bell pepper.
- Red pepper flakes: Optional and depending on how spicy your vegan sausage is.

Variations
- Brown rice: I usually make this with long grain white rice. If you want to substitute brown rice for white, increase the cooking time to 20 minutes.
- Oil free: If you want to make this dish oil-free, simply sauté the veggies in a little vegetable broth instead of olive oil.
- Add beans: For some added nutrition, add in a can of red beans. You can also use it to replace the vegan sausage although you might want to increase the amount of seasoning if you do.
- Soy curls: If you don't want to use vegan sausage, you can use soy curls instead which are much less processed. Rehydrate them first and then add them into the Instant Pot with the broth and crushed tomatoes.
How To Make Vegan Jambalaya In The Instant Pot
Step 1: Set the Instant Pot to sauté. Add the olive oil and heat.
Step 2: Add in the chopped onion, peppers and celery and cook for about 5 minutes, stirring occasionally.
Step 3: Add in the rice, salt, black pepper, smoked paprika, garlic powder, oregano, bay leaf and red pepper flakes (if using) and cook for 1 minute. Stir constantly to prevent anything from sticking to the bottom of the pot.
Step 4: Stir in 3.5 cups of broth and crushed tomatoes and mix well. Press cancel, lock the lid, and set the Instant Pot to pressure cook on high for 5 minutes.
Step 5: Meanwhile, lightly coat a skillet with an oil spray. Over medium-high heat, cook the vegan sausage for about 5 minutes or however long according to the package.
Step 6: Once the rice and veggies are done cooking, let the Instant Pot natural release for about 15 minutes. Then press the quick vent release. Remove the bay leaf and stir in the cooked vegan sausage.
Taste and adjust seasoning. Plate, serve and enjoy.
Expert Tips
- The flavor of this dish will change depending on the vegan sausage you choose. If you like spicy food, go with a vegan chorizo. I used Soyrizo.
- Oil is optional. You can use a little vegetable stock instead to sauté the veggies in.
- After adding in the broth and crushed tomatoes, mix well to make sure there isn’t any rice stuck to the bottom of the pan. Sometimes my Instant Pot will alert me that it's “Burning” but that usually just means that some of the rice is browning a bit.
What To Serve With Instant Pot Vegan Jambalaya
Pair this creole-style jambalaya with your favorite vegetable side. Try out my air fryer glazed carrots, oven roasted bok choy, or cooling vegan coleslaw. Top the jambalaya with hot sauce (like tabasco sauce) and fresh parsley, if desired.

Yes, as long as the sausage you buy is gluten-free. Always check the packaging.
Although they are very similar, the main difference depends on the use of tomatoes. Creole jambalaya has a tomato base while Cajun is made without tomatoes
Once cooled, store leftover jambalaya in an airtight container in the fridge for up to 5 days.

- 3 ½ cups vegetable broth
- 1 bay leaf
- 1 teaspoon salt

- 12 oz. vegan sausage
Instructions
- Set the Instant Pot to sauté. Add the olive oil and heat.
- Add in the chopped onion, peppers and celery and cook for about 5 minutes, stirring occasionally.
- Add in the rice and all the seasonings and cook for 1 minute, stirring constantly.
- Stir in the broth and crushed tomatoes.
- Press cancel, lock the lid, and set the Instant Pot to pressure cook on high for 5 minutes.

Notes
- Vegan sausage varies. If you go with soyrizo like I did, it will be in crumbles. If you can find vegan andouille sausage, you should be able to cut that in slices. Go with the flavor you like best...and what you can find.
- Try to cut your vegetables in similar sized pieces for even cooking.
- Store cooled jambalaya in an airtight container in the fridge for up to 5 days.
