Best Crockpot Vegan Chili

This vegan chili cooks in the crockpot so with a little prep earlier in the day, dinner is done when you get home.  It's full of veggies, beans and amazing flavor!

Prepare all of your veggies by chopping your onions, carrots, celery, peppers and onions.

Sauté your veggies and add all of the spices. Stir in the corn during the last minute of cooking.

Add the cooked veggies to the crock-pot along with the diced beans, vegetable broth, drained and rinsed beans, and a bay leaf.  Set to high for 6 hours or low for 10 hours.

Once the chili is done, use a potato masher or an immersion blender to thicken it up.

Serve with your favorite toppings.  I love mine with avocado and tortilla chips!
