This vegan chili cooks in the crockpot so with a little prep earlier in the day, dinner is done when you get home. It's full of veggies, beans and amazing flavor!
Add the cooked veggies to the crock-pot along with the diced beans, vegetable broth, drained and rinsed beans, and a bay leaf. Set to high for 6 hours or low for 10 hours.
