This vegan version of traditional stuffing has onions, celery and fresh herbs.  It will be the perfect side dish to serve on your holiday table that no one will know is vegan.

You can use any type of bread you like but I prefer using a mix of white and wheat bread.  After cutting in cubes, you'll want to dry them out in the oven so they get a little toasty.

Prepare your veggies by chopping the fresh celery and onions.

Melt the vegan butter in a large skillet.  Then cook the chopped onions and celery for about 12 minutes.

The fresh herbs really make this dish!  Finely chop the fresh sage, parsley, rosemary and thyme.

In a large bowl, combine the dried out bread cubes, cooked celery and onion mixture, vegetable broth, and fresh herbs.

Bake stuffing in a prepared casserole dish, covered with aluminum foil, for 30 minutes.  Take cover off, stir, and bake for an additional 30 minutes.  Let rest for 10 minutes and then enjoy!
