Mint Chocolate Chip Vegan Black Bean Brownies

These minty brownies are gooey, decadent and delicious with a rich chocolate flavor. The best part is that no one will know that there are black beans in these brownies...or that they're vegan.

To make the brownie batter, use either a food processor or a high-speed blender.  Blend up the black beans, maple syrup, vegetable oil, and peppermint extract.

Next, add the flour, cocoa powder, ground flax, salt and baking powder to the wet ingredients and blend until smooth.

Stir in the chocolate chips.

Spoon the brownie batter into the prepared baking dish and bake for 18 minutes.
