There are a lot of great hummus flavors, but this Roasted Eggplant Hummus is the best!  It makes a great afternoon snack and an impressive appetizer tray with veggies.  Or use it as a sandwich spread!

This easy hummus recipe only uses a few wholesome ingredients and no added oil.

First, roast the eggplant to get that great smoky flavor.

Drain the excess liquid from the roasted eggplant.

Pulse the chickpeas in a food processor until they get crumbly.
