These vegan ube rice krispie treats are sweet, chewy and have amazing ube flavor. They're super quick and easy to make in only minutes with just 4 ingredients. Ube extract gives these treats a beautiful purple color that’s perfect for your spring and summer celebrations.

I just can’t get enough desserts with ube flavor! After my husband introduced me to ube many years ago, it’s just been one of my favorite flavors. I now try to come up with as many vegan ube recipes as I can since I’ve yet to find vegan ube baked goods in stores or bakeries.
Luckily, using ube extract makes baking ube desserts super easy! No need to locate the purple yams in stores and cook and mash them. The extract has the flavor (and color) you love.

Ingredient Notes

- Ube extract: I use Butterfly brand that I order from Amazon.
- Vegan marshmallows: I love Dandies vanilla mini marshmallows. Trader Joe’s marshmallows are vegan (and delicious) but can only be found seasonally.
- Vegan butter: I cook and bake with Country Crock Plant Butter. Highly recommend!
- Rice Krispies: Technically, Kellogg’s Rice Krispies aren’t vegan because they contain Vitamin D3 which comes from animals. You can find other brands that do not contain any animal products. Learn more at Are Rice Krispies Vegan?

How To Make Vegan Ube Rice Krispie Treats
Step 1: Line an 8" x 8" baking pan with parchment paper, lightly spray with non-stick oil, or grease with vegan butter. I like to use 2 strips of parchment paper like a "t" to lift the treats out easily.

Step 2: In a large pot, melt the vegan butter over low to medium-low heat. Add in the vegan mini marshmallows and stir continuously until they are completely melted together into one large melted marshmallow. It takes about 8 minutes.

Step 3: As soon as they become 1 mass, remove the pot from heat and stir in the ube extract.

Step 4: Add in the rice krispie cereal and stir gently until they are completely coated with marshmallow.

Step 5: Transfer to the prepared pan and use your hand and a piece of parchment paper to press down to even them out. Let the rice krispie treats cool before cutting.
Expert Tips
- If you can’t find mini marshmallows, you can just cut up regular sized vegan marshmallows. I find scissors the easiest way to do this.
- Do not let the vegan butter or the marshmallows brown. Cook them on low heat and stir constantly.
- Ube extract is both a flavoring and a dye. Be careful of stains.

Store these at room temperature for up to 4 days. Don’t keep them in the fridge or else they will harden.
Ube is a purple yam that’s popular in Filipino baking. It has a vibrant purple color and I think it tastes similar to vanilla. I like using ube extract instead of the actual yam in my baking because it tastes great and it's much easier!

Vegan Ube Rice Krispie Treats

Add in the 10 oz bag vegan mini marshmallows and stir continuously until they are completely melted together into one large melted marshmallow. It takes about 8 minutes. As soon as they become 1 mass, remove the pot from heat and stir in the 2 teaspoon ube extract.
- Add in the 4 cups rice krispie cereal and stir gently until they are completely coated with marshmallow. Transfer to the prepared pan and use your hand and a piece of parchment paper to press down to even them out.
- Let the rice krispie treats cool before cutting.
- Store in an airtight container for up to 3 days. Keep them at room temperature as they don't do well in the fridge or freezer.
Notes
- Ube extract is both a flavoring and a dye. Be careful of stains.
- Technically Kellogg's Rice Krispies aren't vegan. They contain vitamin D3 which is made from animals. You can find other brands that are vegan and work well like Nature's Path and store brands.
- If you can't find vegan mini-marshmallows, cut up regular sized ones in smaller pieces with scissors.
- Make sure you don't brown the butter or the marshmallows! Cook them on low and remove them from heat as soon as they are fully melted.
