    Rustic Vegan Apple Galette

    This vegan apple galette is the perfect dessert for fall.  It has an easy-to-make crust with a spiced apple filling. It’s all the flavors of an apple pie without having to make a perfect pie crust.

    It’s time for me to admit that most of the time I buy store-bought pie crusts.  I really, really dislike making pie dough and trying to get it just right.  But for this vegan apple galette, the dough is super easy to make and it doesn’t need to be “perfect”.

    I like using a food processor to whip it up in just a couple minutes but you can also use a pastry cutter or forks. The crust comes out nice and buttery and tastes like it took forever to make.

    To me, the apples are the star of this vegan apple galette.  They come out tender with plenty of cinnamon and nutmeg flavor.  I absolutely love making this after a trip to a Pick-Your-Own apple farm!

    • Warm spices: This vegan dessert is flavored with cinnamon and nutmeg which are perfect with apples. There’s even a little cinnamon in the crust.
    • Easier crust: No need to make a perfect pie crust!  Apple galettes are supposed to be rustic and this crust is put together in minutes in a food processor.
    • Perfect for the holidays: Instead of an apple pie, make this galette. Arrange the apples in a beautiful design for Thanksgiving.

    Ingredient Notes

    Ingredients needed to make apple galette.
    • Apples: Use any variety you have. Use a combination of two types of apples for more complex flavor. I like to use both sweet and tart apples together.
    • Vegan butter: My favorite brand to use is Country Crock Plant Butter.
    • Flour: I always use all-purpose flour to make this.

    Variations

    • Add another fruit to the apples like pears or cranberries.
    • Top with a vegan caramel sauce.
    • Add a vegan peanut butter sauce.

    How To Make Vegan Apple Galette

    Dry ingredients in the food processor and dry ingredients mixed with the vegan butter.

    Step 1: In a food processor, pulse together the flour, sugar, salt and cinnamon.

    Step 2: Add in the vegan butter and pulse until it's the consistency of sand.

    Step 3: Add in the ice water a little at a time until the dough starts sticking together.

    Step 4: On a floured surface, work and shape the dough into a ball and then flatten into a disc. Wrap it in plastic and refrigerate for 1 hour.

    Step 5: While the dough is in the fridge, prepare the apples. Peel and thinly slice your apples and add them to a large bowl.

    Step 6: In the bowl with the apple slices, mix in the brown sugar, flour, lemon juice, vanilla extract, cinnamon, nutmeg and salt. Cover it tightly with plastic and let sit until the dough is ready. You can keep it at room temp or in the fridge.

    Step 7: On a lightly floured surface, roll the dough into a circle about 12" wide. It doesn't have to be perfectly round. Carefully transfer the dough onto a baking sheet lined with parchment paper.

    Step 8: Place the apple slices and any juice in the bowl into the center of the dough. You need to leave a 2-3" border of dough around them. You can either make a design with the apples or just spoon them in the center. Make sure the apples are a bit flat - not a big mound in the center, or it won't bake correctly.

    Step 9: Next, fold the edges of the dough toward the center, one section at a time. The dough will overlap in places which is fine but try to press a little bit to seal the edges.

    Place the unbaked galette in the fridge or freezer for 15-20 minutes while you're preheating the oven to 400 degrees. Optional: When the galette comes out of the fridge, you can brush the crust with some non-dairy milk and sprinkle with coarse sugar.

    Step 10: Place galette in the oven and bake for about 40 minutes. The crust should be golden brown. Remove from the oven and let cool for about 10-15 minutes. Slice and serve!

    Expert Tips

    • If you don't have a food processor to help make the dough, you can use a pastry cutter or just 2 forks.  Just mix the dry ingredients and then cut in the vegan butter.  Add the ice water about 1 tablespoon at a time until it is the right consistency to form a ball of dough.
    • Make sure your vegan butter is cold when making your crust.  You can even put it in the freezer for about 10 minutes before using it.
    • Make sure the apples are sliced thinly so that they cook well and are tender.  You don’t want any crunchy apples in this.
    • Refrigerating or freezing the unbaked galette before baking it helps it keep its shape.
    • Be careful when you are moving it after it bakes so the crust doesn't break.

    What To Serve With Vegan Apple Galette

    This delicious apple dessert can be elevated with a scoop of vegan vanilla ice cream or some non-dairy whipped cream.  Also, under “Variations”, I also linked to recipes for a caramel sauce and a peanut butter sauce. 

    Recipe and Storage FAQs

    How do you store leftovers?

    Store leftover galette in the fridge for up to 5 days.  Make sure it’s in an airtight container.  I like to slightly warm it back up before serving.

    What’s the best variety of apples to use?

    Any kind you like!  There are no “right” and “wrong” types to use.  I like to mix varieties when I make it.

    Is galette dough the same as pie dough?

    Pretty much.  If you don’t have time to make the dough (or just don't want to), find a store bought vegan pie dough instead.

    Do I need to carefully arrange the apple slices?

    Not at all.  You’re welcome to just spoon them into the center.  Just make sure there isn’t a big mound of apples or else the crust below it will not bake properly. If I'm serving this vegan apple galette for a special occasion, I do make the time to try to make it "pretty".

    Vegan Apple Galette

    All the flavors of apple pie but in a rustic galette. The crust is simple to put together using a food processor. It's a beautiful and tasty dessert!

    Equipment

    Ingredients

    Crust

    • 1 ¼ cups all purpose flour
    • 2 tablespoon granulated sugar
    • ¼ teaspoon salt
    • ¼ teaspoon cinnamon
    • ½ cup vegan butter, very cold
    • 3-4 tablespoon ice water
    • non-dairy milk for brushing optional
    • coarse sugar for sprinkling on crust optional

    Filling

    • 3 apples, peeled and sliced into ¼" slices
    • ¼ cup brown sugar
    • 1 ½ tablespoon all purpose flour
    • 2 teaspoon fresh lemon juice
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon salt

    Instructions

    Make the crust

    • In a food processor, pulse together the flour, sugar, salt and cinnamon. Add in the vegan butter and pulse until it's the consistency of sand. Add in the ice water a little at a time until the dough forms a ball.
    • On a floured surface, work and shape the dough into a ball and then flatten into a disc. Wrap it in plastic and refrigerate for 1 hour.

    Make the filling

    • While the dough is in the fridge, prepare the apples. Peel and thinly slice your apples and add them to a large bowl.
    • In the bowl with the apple slices, mix in the brown sugar, flour, lemon juice, vanilla extract, cinnamon, nutmeg and salt. Cover it tightly with plastic and let sit until the dough is ready. You can keep it at room temp or in the fridge.

    Put galette together

    • Line a large baking sheet with parchment paper.
    • On a lightly floured surface, roll the dough into a circle about 12" wide. It doesn't have to be perfectly round. Carefully transfer the dough onto the prepared baking sheet.
    • Place the apple slices and any juice in the bowl into the center of the dough. You need to leave a 2-3" border of dough around them. You can either make a design (like in circles) with the apples or just spoon them in the center. Whichever way, try to keep them a bit flat - not a big mound in the center.
    • Next, fold the edges of the dough toward the center, one section at a time. The dough will overlap in places which is fine but try to press a little bit to seal the edges.
    • Place the unbaked galette in the fridge or freezer for 15-20 minutes while you're preheating the oven.
    • If you're using it, brush on some non-dairy milk onto the crust and sprinkle with the coarse sugar. This is optional.

    Bake

    • Preheat the oven to 400℉. Place galette in the oven and bake for about 40 minutes. The crust should be golden brown.
    • Remove from the oven and let cool for about 10-15 minutes. Slice and serve! You can also top with some vegan vanilla ice cream or whipped cream.

    Notes

      I love how this looks like it was difficult to make but is actually easier than making apple pie. Everyone loved it and it will definitely be on my Thanksgiving table this year.
